This smoothie is loaded with vegetables, but still manages to taste good. Even my 4 year old thinks so! Apple does a much better job of hiding the vegetables than cherries or berries. But apple is more fibrous, so to improve the texture, this smoothie needs more water and ice.
Ingredients:
- 1 green apple, cored with the peel left on
- 1 c kale or spinach leaves, lightly packed
- 1/3 cucumber
- 1/2 inch lemon slice, peel on
- 1/2 avocado
- 1 Tb chia seeds
- 2 pitted dates
- 1 1/2 c water (if a sweeter flavor is desired, substitute 1/2 c water for organic apple juice or lemonade)
- 1 1/2 c ice
Process:
Blend all ingredients until smooth in a Vitamix or similar. Enjoy cold.
