Green Apple Vegetable Smoothie

This smoothie is loaded with vegetables, but still manages to taste good. Even my 4 year old thinks so! Apple does a much better job of hiding the vegetables than cherries or berries. But apple is more fibrous, so to improve the texture, this smoothie needs more water and ice.

  • 1 green apple, cored with the peel left on
  • 1 c kale or spinach leaves, lightly packed
  • 1/3 cucumber
  • 1/2 inch lemon slice, peel on
  • 1/2 avocado
  • 1 Tb chia seeds
  • 2 pitted dates
  • 1 1/2 c water (if a sweeter flavor is desired, substitute 1/2 c water for organic apple juice or lemonade)
  • 1 1/2 c ice

Blend all ingredients until smooth in a Vitamix or similar. Enjoy cold.
