Caramelized Oranges

I love to serve fruit for dessert in lieu of starchy and overly sweet treats. This recipe, inspired by Fancis Mallmann’s Seven Fires, is one of our favorites. We serve it with coconut whipped cream.

  • 4 oranges, peeled and slice in half
  • 1 Tb coconut oil
  • 1 sprig fresh rosemary, leaves removed and chopped
  • 4 tsp coconut sugar

Heat a large skillet over medium high heat. Prepare the oranges by slicing off both ends, then removing the peel and slicing them in half. Sprinkle each half with rosemary and press the herbs into the flesh. Top each half with about 1/2 tsp of sugar.  Melt the coconut oil in the hot pan, and add oranges sugar side down. Leave undisturbed for about 5 minutes, then check to make sure they are cooking evenly and caramelizing. When ready, remove to a serving plate.

We like to serve coconut whipped cream on the side.

PS- if you’re not strictly paleo, just substitute the coconut sugar for any organic sugar.
