Berry Compote

I like to make this when I’m making a batch of gluten-free waffles as a low sugar alternative to maple syrup. Berries are naturally sweet, loaded with antioxidants, and have a low glycemic index. I usually have several big bags of frozen organic fruit on hand from Costco.

Ingredients:

  • 1 1/2 cups frozen fruit (blueberries, raspberries, mixed berries or strawberries)
  • juice of 1/2 lemon
  • 2 Tb orange juice
  • 2 Tb water


Process
:

Add berries, juices and water to a sauce pan. Heat to a simmer and cook on medium low for 20-30 minutes until it thickens, stirring often. Let it cool a bit, and serve.
